IT was the sweet smell of success that filled the air yesterday for apprentice bakers Andrew Davidson and Josh Mantellato.

The Hamilton TAFE students won the NSW Bakeskills Competition, earning the right to represent NSW at the national competition in Melbourne next year.

"We thought we'd be slow and forget things, but we went in there and did what we are trained to do," Mr Davidson said.

Teams of two prepared bread and desserts for the scrutiny of judges gathered at the Hamilton campus.

Chief judge Justin Williams said contestants were appraised on criteria such as creativity, design, taste and hygiene.

"When they [competitors] go to work their boss tells them what to do. With this they have to come up with a work plan based on what they have to produce, then they come in and do it themselves," Mr Williams said.
